Warming Winter Soup

This soup will warm you from the inside out with the comforting flavours of sweet potato and chai. The combination of these two main ingredients creates a soup that leaves you satisfied and is perfect for cozy winter dinners. Sweet potatoes are a great superfood that can hydrate your skin, which is so important during the cold months! This this soup leave you glowing and your skin feeling great!

Warming Winter Soup
(gluten-free, dairy free, vegan, paleo)
Prep time: 20 minutes | Cook time: 35 minutes | Serving size: 4 large servings

Ingredients:

•    2 yellow onions, diced
•    1 Tbsp coconut oil
•    3 big sweet potatoes, peeled and cut into chunks
•    1 apple, diced
•    1/2 a fennel bulb, diced
•    2 cloves garlic, roughly chopped
•    1/4 tsp cardamom
•    1/4 tsp cinnamon
•    1/4 tsp cloves
•    1/8 tsp nutmeg
•    1/8 tsp ginger
•    5 cups broth
•    1 cup coconut milk
•    1 Tbsp cider vinegar
•    Salt and pepper to taste

Directions:

  1. Heat coconut oil to medium heat in a large soup pot. Add the onions and sauté until golden brown, 4 minutes.
  2. Add the remaining ingredients, except the apple cider vinegar, salt and pepper, and bring to a boil.
  3. Lower the heat and simmer for 30 minutes or until the vegetables are tender.
  4. Remove from heat, add apple cider vinegar, salt and pepper, and puree until smooth.
  5. Return to the heat adjusting the consistency of the Warming Winter Soup with water if required and adding salt and pepper to taste.
